Today’s Bento: Smoked salmon rice ball, Japanese fried chicken, and tofu spinach salad. Sadly, the wildfire in Bay Area is still going on, and the air quality is still bad here. I’ve read some news about the firefighters here. I really appreciate their hard work and sincerely hope that they are safe.🙏 Today’s bento is a rice ball bento with the leftover fried chicken which I got from a Japanese supermarket yesterday. It still taste good even when it’s cold. It’s amazing! I’m not a fan of deep-frying at home because of all the oil and efforts(it does make food taste more delicious. I must say), but fried chicken has always been a classic Japanese bento dish that I’m curious about. Now I finally understand why it’s so popular. Here’s a simple recipe for tofu spinach salad: 🥢Boil a bunch of spinach and rinse it with cold water to let it cool. Cut spinach into bite size and mix it with 2spoons of sesame oil and a pinch of salt. 🥢Use a clean tea towel to wrap 1/2 firm tofu. Drain the water in tofu. Mix tofu and spinach together and add in 3spoons of sesame salad dressing.
