Todayâs bento: Lunar New Year ð§§
Last Friday was the first day of lunar calendar for 2021, for the whole weekend I was in holiday mode, which meant eating lots of snacks and hanging out with friends.
Traditionally, you expect lots of relatives and friends to visit during New Year, so every household would prepare a red snack box filled with goodies to treat their guests.
Today I want to share a classic Shanghai style New Year dish, four happiness wheat gluten(there are four ingredients). You can find wheat gluten in Asian grocery stores as kaofu, or mian jin.
ð¥¢In a bowl, soak 6 dried shiitake mushroom with 1cup warm water.
ð¥¢Slice 10oz wheat gluten into 0.5 inch thick slices, and boil in water for 30seconds. Let them cool and then drain the excess water.
ð¥¢Heat a pan with 1spoon of oil. Sauté both sides of the wheat gluten for 1-2minutes or till golden brown. Set aside.
ð¥¢In the same pan, add 2spoons of oil to sauté 1/2cup of sliced carrot till soft. Add the soaked mushrooms along with the water, 1/3 cup edamame, 1/2 cup wood ear, wheat gluten, 3spoons of soy sauce, 1spoon of dark soy sauce, 3spoons of sugar, 1spoon of mirin. Cover and boil for 3-5minutes with medium to low heat.
