Chicken Meatball Bento

I like using ground meat a lot, because it’s so versatile and saves me the time of cutting the meat and washing the chopping board😅

Since I can’t eat beaf, I use ground pork, chicken, and turkey a lot. Ground chicken and turkey contains less fat and thus tend to be drier when made into patties or meatballs. In order to make it taste moist, I use soy sauce for seasoning instead of salt, and add in a bit sesame oil as well. Most importantly, don’t press the meatballs and sear the meatballs with high temperature.

Chicken meatballs:
🥢Mix 1lb ground chicken with 1 tablespoon soy sauce, 1 spoon oyster sauce, 1/2 cup chopped scallion, 1 tablespoon sesame oil, 1 teaspoon cooking wine, few pepper, and 1 spoon corn starch.
🥢Shape the mixture into 8 meat balls and lightly coat the surface with corn starch.
🥢Heat the pan and 1 tablespoon oil with high heat. When the pan is hot, sear both sides of the meatballs for 1-2 minutes till golden brown. Set aside meat balls
🥢In the same pan, reduce to medium heat and add in 1 tablespoon ponzu and 1 tablespoon mirin. When the sauce starts boiling, coat the meatballs with sauce and cook for 2-3minutes.
🥢For garnish, wrap the meatballs with seaweed!

今天的便當是雞肉丸子便當，搭配蔬菜炒飯、鹽昆布高麗菜和醃紫高麗菜。

最近我把本季最喜歡的日劇《大豆田永久子與三個前夫》看完了，覺得好捨不得啊🥺我很喜歡這部劇慧黠幽默的對白，乍看之下平淡瑣碎，但是其實劇情跟角色的安排都很精巧，讓人回味無窮。（順帶一提，我是慎森派的🐼）

雞肉丸子因為一出爐就被我偷吃的緣故，🤣以致於有一個便當少一顆丸子，只好用白煮蛋填空！雞肉丸子的食譜在這裡：

🥢在料理盆中混合五百克的雞絞肉、一把切碎的青蔥、一大匙醬油、一小匙蠔油、一大匙麻油、一小匙料理米酒、一小匙太白粉和少許胡椒粉。
🥢分成八等分之後稍微在兩手間甩打成團，外層再裹上一層薄薄的太白粉。
🥢大火熱鍋熱一大匙油，把肉丸兩面煎1-2分鐘至金黃、鎖住肉汁，中間不要壓肉丸喔！放置備用。
🥢原鍋轉中火加一大匙椪醋、一大匙味霖，沸騰後加入肉丸，煮2-3分鐘到醬汁濃稠，包上海苔片裝飾。
